I came up with the theory that The Big Bang happened because two universes collided and then created a second univers... This would explain redshift!

What your describing is also discussed in the Ekpyrotic Universe, by Neil Turok and Paul Steinheardt in which they state the big bang was caused by the 'collision' of two '3d planes'.

Your argument for it being the cause for it to be red shift doesn't make sense. Scientists argue that redshift is caused by cosmic microwave background radiation which is everywhere in space bouncing from all different directions and then movement of the stars being observed, I.E If its moving away from us it turns red due to the CMBR This also would explain the theory that the universe is still expanding.
