I am going to start lessons on one or the other... I would like to hear some opinions on which is harder to learn and which sounds better overall.

I am leaning towards the cello.

No, take the violin. The most beautiful pieces are written for violin, the violin is easier to carry and move around. A violin also has a more active range than the cello. Not too many tunes are written singularly for bass clef. Violin is harder, but ultimately more rewarding.
