The money goes into a "hopper", basically a bucket for coins and a stack for bills. Then the vendor comes and empties the hopper and takes the money to the bank. Then the money is used to pay the bills, including the paychecks, of the vending company. The money from used for the paychecks is then used by the employees to pay rent and buy groceries, where upon the money is collected and sent to the bank, and the cycle continues.
