why should there be exams, all we are assessed on is the 30 minute+ time slots where we are made to be completely in silence and made to write pages after pages of information that we have been made to remember stacks of information that we will not use ever in life!

why should we have to sit these pressure filled slots, we should be assessed on the work we do in class where we are around friends and feel more comfortable in the environment around us?

Because they're a measurement of your retained information. Exams should focus on you applying what you have learned in your course into real life situations.

There are multipel variables when being observed, but in an exam environment every is on fair footing, and you either do or don know what is on the test.

Exams are good because they force us to review what we were taught. This improves long term memory.

There should be projects where you need to do further research on a topic, and at the same time apply this newly learned information with what you've already covered.

Like "A=" then you tick B,C, D, or E?

That is not an exam in my education system. Normally most subjects have short questions with some questions like that but are worth about 20% of the final grade.
