I'm a layman on genetics by a pretty wide margin, but my understanding of it is that a gene randomly mutated and caused this bird to change; if the bird survives to reproduce, it passes that gene down to its offspring where it may lay dormant or resurface later on... perhaps if it mates with another "survivor" with that trait. I don't really understand the recessive gene stuff though.

Now, these mutations are almost always very bad, but the sheer law of large numbers states that eventually, no matter how small the odds, you will achieve a result with small probability- and the Earth has A LOT of time. Once you concede that mutations happen and they might be sometimes beneficial, it's only a short step to say that those with the beneficial mutations might survive and propagate their genes either faster, more efficiently, or with a greater rate than the others of the species. Hence, genetic drift happens and micro-evolution occurs.

Macro-evolution is quite a bit more complex but they are based on the same fundamental principles.

After all this time, news with potential kfc impact and Koopin doesn't see the connection.

It's doubtful that the chicken is a genetic mutation, rather a case of a conjoined twin. That's a failure of the gestation process, not a genetic mutation.

The average person has 70 genetic mutations, few of them obvious.

Some species are more resistant to mutations that others. Horseshoe crabs have evolved little in 400 million years. Humans have evolved rapidly in the last 4 million years. There has been notable human evolution in the last 10,000 years: smaller skull size, lighter skin in Northern climates, etc.

Essentially, yes. Although, there are other processes at work (genetic drift, gene flow), natural selection is the main one.
