Idk... people like their beef cooked differently. I like burgers medium rare, steaks rare and I'm not above eating the latter raw (if it's a high enough quality of meat). I was more or less just wondering what Roy thought the appropriate level of cooking was.

Well, that's probably a good thing. Most ground beef is, well, disgusting. But ground kobe burgers are best served medium rare, for instance. I guess it just depends on the restaurant.

Well done? It's tougher and has more cancer causing qualities, supposedly. It reduces even further the chance of eating a substantial amount of dangerous bacteria or parasites, but I think that's pretty negligible with beef as long as it's left in steak form.

I just know that with grinding and mincing you need to be careful to cook it properly again.
