Why aren't all Calvinists universalists?

They really should be. Think about it. Calvinists are either hard determinists or compatibilists. On either one God could determine that humans accept the grace of God and thus everyone would go to heaven. Forestalling the objection that God simply *has* to display his wrath - as he has to display his love, compassion, anger, justness, etc - the penal substitution theory of atonement (which most Calvinists adhere to) already takes care of that: God took out all his wrath on Jesus on the cross in order to reconcile himself to humans. If not that, why would God not just take out his wrath on someone like Satan and then save the rest of humanity? Logically, there is no reason why any of these scenarios couldn't be true. So, what's the issue, Calvinists?

At least with Arminians they have the escape hatch of "libertarian free will" (which is actually an escape hatch that goes nowhere, but I won't get into that just now)....

That is a good question. But the Calvinist internal logic leads to it more clearly and in less steps, so I'm focusing on that. Arminians can't get away with from it either but it's a more long drawn out process of showing this.
