When antiparticles and particles annihilate, they turn into photons, e.g. if an electron and a positron annihilate, two photons "replace" them. Is there a way to reverse annihilation, i.e. turn the two photons into electrons and positrons? Some research apparently suggests that there is. The reverse reaction of electron-positron annihilation is called electron-positron "creation," and is a form of pair production governed by two-photon physics. [https://en.wikipedia.org...] Can anyone link me to papers relating to this?

Are you interested in pair production in general or particularly in two photon pair production?

Normal pair production of electron-positron pairs occurs when a high energy gamma ray is in the presence of a large nucleus. Direct photon photon interaction is much rarer.

I'm specifically interested in two-photon pair production. My understanding is that the interaction of any high-energy gamma rays with a large nucleus can cause pair production (my favorite example is the quantum fluctuations within false vacuums).

There's been some experiments on this utilizing lasers into a Bose-Einstein Condensate (see light slowing/stopping experiments), however the problem is with trying to experiment with photons and the high level energies required to propagate them through the condensate, which tends to cancel out thus producing on copies of the original photons. The technology for this just isn't quite there yet.

The CMS-TOTEM study at CERN will be able to produce photon to photon collisions via proton to proton collisions. I think this goes live next year.
