It simply imparts umami to food. MSG is just the sodium salt of Glutamic acid which is not harmful andis so natural that even our body makes it. Our body treats MSG just naturally. Anything consumed in ecxess quantities is harmful. So if we consume sugar and salt in approapriate quantities, same way MSG should not be a problem for us. It simply makes the food taste better.
Instead of MSG, replace that flavoring with sea salt. MSG causes arterial and heart problems when consumed over the long term. These health effects have been known for decades, so MSG shouldn't be on take out food whenever possible. There are plenty of viable alternatives in today's world such as salt, sea salt and other seasonings.
