Veal is like any other consumer product: supply and demand will drive the market for veal. If it is acceptable to kill any animal for food, calves are no different. It doesn't matter if the cow is 2 months old or 20 years old, the slaughter of any animal for food is the same difference.
Why does it become any more acceptable or moral to wait until the calf becomes a cow to kill it for meat? It's not like we're squandering the calf's potential. It's being raised for meat, it's always meant to be meat, and it always will be meat. Waiting until it's grown doesn't make it any different.
