Maybe people prefer beef a lot more than veal and therefore that alone would overshadow the veal market and so I would not imagine it being an important industry when compared to other foods especially. People may even consider pork to more economically important that veal is so maybe it is not important after all.
Although veal farming could be seen as a lucrative industry, it is not important to the economy as a whole. The farming and meat industry is very broad and made up of many different contributions, veal being one of them. If veal farming were to suddenly stop, the industry as a whole would not be affected too much.
