Hard. This would be like Hitler turning a new leaf. I mean, if he was real and he genuinely saw the light, I would accept him, but his sins have already been done.
Griffith did nothing wrong.

One could make the argument that Anakin was mentally unstable and thus he shouldn't be held responsible for his actions (or at least not as much as he otherwise would be).

Anakin knew exactly what he was doing. What ever he had to in order to get what he wanted; Putting his own desire above that of the common good and taking innocent lives (Children for crying out loud) in the process. He was fully aware of the darkside and had full knowledge of their lies, tricks and schemes but he still chose to enter into a contract with a Sith lord. Because of his prior knowledge and training, (which would be far more focused on prevention because his instructors had fore warning of his weakness,) Anakin should not be shown mercy. However, it was prophesied that this would happen and it is a movie that needs characters, in that light, Annie had no real choice (he is fiction after all)
It depends, if you regard the Sith and Jedi as religious forms, you could compare it to the Crusades, in which there was an entire army of children who died.
He did try to make up for it by destroying the Sith.
We must remember, Darth Vader killed most of the jedi. Anikin died the momment he betrayed mace windu. Anikin would later fulfill the prophecy of the force when he kills palpatine. Thus vader also died with the emporer
Darth Vader died when Anakin took over and threw Darth Sidious down the shaft. This was a redeeming act for him. That's why he was able to come back as a ghost through the force like Obi-Wan and Yoda.
