Most games start after noon at which time most religions with this restriction in place have ended their service and their participant have gone home already. It usually doesn't have any conflict with church-going fans. However, yes, the athletes are technically working and thus it is wrong for them. But we, in america, have grown soft and thus don't put much importance on not working on Sundays.
